Healthy Kickoff to Summer

Spinach and Fruit Salad with Strawberry and Poppy Seed dressing

Serves 4-6 people


Ingredients for salad:

14 ounce fugi apples (or any kind you prefer)

14 ounce pear

14 ounce strawberry

12 ounce spinach


Ingredients for dressing:

8 ounce water

5 5⁄8 ounce strawberries

4 ounce agave syrup

3 ¼ ounce red wine vinegar

4 tsp poppy seeds


Directions:

1. Cut fruit into bite sized pieces and place on a bed of spinach

2. For dressing:

a. Blend strawberries on low in blender.

b. Once strawberries are blended, add red wine vinegar, water and agave syrup.

c. Add poppy seeds to dressing and mix thoroughly (don’t blend).

3. Enjoy a refreshing salad!
